Today we bring you our spicy “Louisiana style” welsh gumbo!

  • 1 kg Lamb Mince
  • 2 Large Lobsters
  • 1 tbsp Minced Garlic
  • 1 tbsp Ground Coriander
  • 1 tbsp Chipotle Chilli Flakes
  • 1 tbsp Nutmeg
  • 1 tbsp All Spice
  • 1 tbsp Cayenne Pepper
  • 3 Red Onions
  • 1 bunch Celery
  • Whole Fennel
  • Handful Cherry Tomatoes
  • Handful Chopped tOMATOES
  • Heaped Tbsp White Flour
  • Pint Lamb Stock
  • Tin Chopped Tomatoes
  • Bunch Parsley
  • Grilled Lemon Halves


  • Light BBQ and keep at medium heat
  • Add lamb mince to mixing bowl
  • Add garlic, coriander, chilli flakes, nutmeg, all spice and cayenne and mix well
  • Shape into tennis ball size portions
  • Place paella dish onto grill and get screaming hot
  • Add Chilli No. 5 Pizza Pizzazz Oil to dish and add meat balls
  • Brown meatballs on all sides for around 3 mins per side
  • Once browned add 3 chopped red onions
  • Once sweated down, add the chopped celery and fennel
  • Add all tomatoes, cook for further 5 minutes
  • Add a heaped tablespoon of flour and coat all ingredients
  • Add pint of lamb stock, let simmer for 10 minutes.
  • Add tin of chopped tomatoes and half a bottle of Louisiana BBQ sauce. Stir well, let simmer for 5 mins.
  • Chop lobsters in half add butter and parsley. Place lobsters shell side down in gumbo, place lid of bbq to steam the shellfish for 10 minutes
  • Chargrill lemon halves
  • Take whole pan off the heat
  • Sprinkle with parsley and garnish with lemons
  • Serve in bowls and enjoy at the beach!
